From the verdant slopes of Karnataka's Western Ghats, the Ratnagiri Estate—aptly named "Pearl Mountain"—introduces a groundbreaking approach to coffee processing. Under the stewardship of third-generation farmer Ashok Patre, this estate harmoniously blends tradition with innovation.
The Hemavathi varietal cherries, cultivated at elevations around 1,355 meters above sea level, undergo a meticulous thermal shock natural process. This involves heating the ripe cherries to 57°C, followed by rapid cooling to -2°C, a technique designed to enhance the coffee's depth and complexity. Post-processing includes 28 days of drying and 45 days of stabilization, ensuring a well-rounded flavor profile.
In the cup, this coffee presents a rich tapestry of flavors: dried cranberry, cherry, pomegranate, clove, cacao powder, and malt. The estate's commitment to sustainable practices and biodiversity, intercropping with pepper vines and maintaining a lush canopy of silver oak trees, further accentuates the unique terroir of this offering.
